Oxidative stability of mustard seed oils will be investigated. In addition, the behaviour of these oils under various oxidative conditions will be studied. This will allow a quality and safety assessment of these poly unsaturated oils as function of their oxidation status, which is currently impossible due to a lack of relevant data.
Proteins in foodstuffs: key components to safety and quality. Ghent University
This research investigates fundamental and practical aspects of protein oxidation in foodstuffs. Both safety, nutritional and sensorial quality of foodstuffs will be evaluated as a function of different treatments and storage. Analytical techniques will be developed and/or combined in order to monitor these phenomena. Protein oxidation will be studied in several model systems and foodstuffs.
