The correlation between microbial diversity and identity of Flemish Old Brown ales Ghent University
Currently, the microbiota in old brown beer fermentations is largely unknown. Therefore, it is impossible to describe and protect these beers. The aim of this project is to characterize the microbiota and metabolites of these beers through new high-throughput technologies. This will allow us to develop generic and specific criteria for old brown beers and to deliver a quality control tool.
