Cryo-scanning electron microscope (Cryo-SEM)

Materials canU+2019t be observed using SEM without removing water. In contrast, cryo-SEM can be used to study the microstructure of hydrated samples. The goal of cryo-SEM is to vitrify the liquid phase with all the constituents, preserving them in their natural and original state. Cryo-SEM offers an obvious added-value in the visualization of both food products and other biological systems.
