Impact of dietary emulsifiers on the human gut microbiome and gut health and the search for safe natural or biotechnological alternatives

This project aims at assessing the impact of the use of emulsifiers occurring in processed foods on the gut and it’s microbiota in order to lighten up part of the link between western diets and the occurrence of western diseases like obesity and metabolic syndrome. On top, the possible use of natural and biotechnological alternatives for conventional emulsifiers will be investigated.
