Natural dyes from food waste; the use of molecular engineering to develop fit-for-purpose extraction pathways

This proposal will develop sustainable extraction pathways for natural dyes from fruit and vegetable waste with a focus on anthocyanins, quinones and carotenoids. To guide the extraction procedure and optional derivatization strategy towards the best suited application, molecular descriptors will be used that give an indication of the stability, affinity and color of the extracted molecules.
