Application of edible insects in Western food products

The main objective of the present project ENTOMOFOOD is to facilitate product innovation in the food industry based on edible insects. To this end, the project wants to convey two deliverables:

  1. A guide to the marketing of foods in which insects are processed
  2. Industrial-scale production processes for some stable semi-finished products (pasta and/or powder)
