Gas exchange in tomato in relation to microstructural changes during development and ripening

Tomato is a major food crop worldwide and is a common ingredient for a healthy diet being consumed both fresh and processed. The aim of this PhD project is to study the role of gas transport processes in establishing spatially resolved respiration kinetics of tomato fruit during development and ripening. This is expected to be related to differences and changes in microstructure and metabolic activity of the tissues. Multiscale reaction-diffusion models of respiration/fermentation will be constructed by including spatial variation of the transport and kinetics properties.
